Something has been sweeping the food blogging world, and it's courgette pasta. I wasn't particularly thrilled to try it, I thought it was an interesting concept but I LOVE pasta and couldn't imagine anything coming close to its starchy goodness. I even prefer wholewheat pasta over white pasta as it is just so much tastier and better for you.
I can't pretend that there was a large amount of skill to making it work as it was one of the easiest things I've cooked in a while. I don't have a fancy spiraliser or grater so just used a normal grater to get strips of courgette. I had already made my Quorn bolognese sauce so that had been defrosting while I was at work. I heated it up in a frying pan while I cut the courgette and when I had lots of strips (one courgette per person) I sprinkled it in salt and then added it to the pan.
I made sure to let the courgette get the bottom of the pan so it was being fried rather than slowly warmed as I wanted a crispness to it. After literally two minutes I added a little garlic granules to the courgette and then tossed it in the bolognese sauce. Then served with a little of Aldi's own 'parmesan cheese'. It was awesome.

It obviously doesn't taste like pasta but it's not overly courgette-y either. It just tasted off the sauce and garlic that I had added. I'm a big texture person and was so pleased to find that it wasn't soggy and had a bit of bite to it - like al dente pasta. I would definitely do this again (actually I'm having it tonight) as I am so pleased with the results and it was surprisingly filling. For big appetites I'd at least have 1.5 courgettes though!
