Pancake day is one of my very favourite holidays, after Bonfire Night and Christmas. I think I like the way it has the ability to turn an average Tuesday into an awesome one. I also like how it's the only celebration that takes about two seconds to prepare for.
Living by myself, I didn't really have pancakes last year, but this year I was determined that I wasn't going to let it go again. So I got friends from work involved and we had pancakes in the workplace, which was an absolute genius idea even if I do say so myself. Even if it's just for the fact I got to actually show my work husband how to do something in the kitchen.

Last weekend I went along to Trinity Kitchen,which is always a safe bet when you have no idea what you want to eat. I'm always in the mood for Mexican food (seriously it's like a small addiction) but I decided to not go for my usual delicious meal from Tortilla but instead opted for Rola Wala. It was like a burrito bowl with a brilliant Indian twist, and it was so, so, SO good.
